Rennes: we tasted the vegetarian sausage pie from the WAP food truck

It takes guts to revisit the famous sausage patty ! And even more so to offer a 100% vegetarian recipe. A Rennestwo brave cooks accept the challenge inside their green food truck, called WAP. The products, colored and made with care, are sold every Wednesday in the Hoche place.

The classic WAP

Céline and Louise, managers of the mobile WAP, offer two different sausage patties. The first is called « Classic WAP » and consists of a homemade vegetable chorizo ​​made with chickpeas, vegetables, pepper et Provencal herbs. “And the sausage casing is made with some by my supplier”, adds Céline.

Céline and Louise, those responsible for WAP mobile, are present every Wednesday at the Place Hoche in Rennes.

Next, the WAP Classic is accompanied by Pickle Style Cabbage marinated in a thyme brine. everything is rolled up a buckwheat pancake (obviously) and seasoned witha homemade sauce : vegetarian mayonnaise, curry or even agave mustard (sausage pancake with mustard: the base).

Simplicity is good. The WAP Classic takes us back to a simple but very elaborate and effective streetfood.

The complete WAP

Second recipe: the Complete WAP. Same sausage, same pancake but with other accompaniments to satisfy the appetite of the hungriest.

“Le Complet” is composed here ofa slice of salad to see you for the freshness, pickled vegetables for the crunch as well as sprouted lentils for proteins. All this decorated with one of the four homemade sauces.

The birth of WAP…

The idea for this foodtruck was found by Céline, one Saturday morning, in the middle of the crowd at the Lices market. As she escorted her friends to the traditional pancake-sausage truck, she says she had a “revelation” in making a committed artisan sausage pancake. The name WAP is also a nod to her commitment to solidarity with pigs: WAP = We Are Pigs!
